What makes an after-hours message worth sending?
Telling the caller when you are actually back, and giving them something to do in the meantime. A message that only says 'we are closed' leaves them free to call someone who is open.
Should I define what counts as an emergency?
Yes, and be specific. 'If this is an emergency' invites everyone to decide they are one. 'No heat, no water, or a leak that will not stop' tells people plainly whether they qualify.
Does an auto-reply annoy people?
Far less than silence. What annoys people is an auto-reply that promises a callback nobody makes, so only promise what you will actually do.
